Bodegas Salzillo
Bodegas Salzillo focuses its business activity in the development and marketing of wines covered under Jumilla’s Designation of Origin.

We are a family business recently created (2002), which is the culmination of a dream for its founder, Augustin Lacárcel Ruiz, who always had the inner desire to build modern facilities capable of highlighting the unique characteristics of the wines area. That is why, today we can develop a wide range (white, rosé, red and sweet) of quality wines that have received, despite its short history, several national and international awards.

In Bodegas Salzillo we boast about our indigenous variety pf grape, Monastrell (Mourvère, Mataró). Exclusive of southeastern Spain, this grape reaches its highest expression within the D.O. Jumilla.

Besides Monastrell grapes, other red varieties (Cabernet, Syrah, Merlot,…) and white varieties such as Macabeo, together with the unique conditions of soil and climate, allow us to offer modern, fruity and tasty wines, with pleasant tannins.

 

ZENIZATE MONASTRELL - Tinto 2010

Elaboration:
This wine is the result of 15-day low-temperature maceration. The wine, which is obtained by gravity, from the weight of the grapes without pressing, can express the best of its fruit flavors.

Tasting Notes:
Intense cherry color with purple shades, it has fruit and floral aromas, like rose, linked to dairy aromas. With expressive and meaty, persistent fades.

-Silver medal in the XIII Conquest of Quality Wines from D.O. Jumilla (March, 2007).

ZENIZATE CABERNET 2010 - Tinto

Elaboration:

This wine has been elaborated with Cabernet grapes harvested at the end of September, it is located in the same situation than Merlot grapes at fife hundred meters high in sandy soils.

Tasting Notes:
This wine has a strong red color, and great aroma intensity dominated by black fruits together with spices like clove and an animal fund. It is smooth, with velvety tannins.

   

ZENIZATE SYRAH 2010 - Tinto

Elaboration:
Zenizate Syrah has been elaborated from vines older than 20 years chosen and harvested at the end of September on a hillside planting. The soil of the vineyards is rocky and the mountain’s microclimate prevails. The grapes are also the object of prefermentative macerations in order to extend the maceration duration. Under those exigent conditions, the result is a wine with a intense and complex aroma that gives a big number of flavors.

Tasting Notes:
With a brilliant cherry color and dark shades, the wine has bright violet reflexes. It has cherry and spices aromas. An exuberant taste, with fine tannins that ends in a superb and long finish.

ZENIZATE CRIANZA 2008 - Tinto crianza

Kind of Wine: Red Wine aged in oak barrels

Vintage: 2005

Elaboration:
This wine is produced from an exceptionally long maceration with the purpose of reaching the highest aromatic quality. After maceration, the wine is translated to French Oak barrels where malolactic fermentation takes place, and where the wine rests during nine months. After this the wine rests in the bottles during for months to get the maximum quality.

Tasting Notes:
An intense cherry color rounded by a slightly brick-red ring denotes the evolutionary rest of the wine in our oak barrels. It retains primary aromas such as raspberry, lichy and cherry followed by tertiary aromas acquired in its wood rest, such us vanilla, leather, and spices. Its flavor is velvety, round, balanced and balsamic.

 

 

ZENIZATE SELECCIÓN - Tinto

Varieties: 60% Monastrell, 30% Syrah, 10% Cabernet Sauvignon
Alcoholic Degree: 13,5º

Vintage: 2005

Elaboration:
For this particular wine, the maceration is produced during fifteen days in order to obtain a wine suitable for the short ageing in barrels where the wine will stay for approximately four months. This process results in malolactic fermentation. The 300 liters barrels used are made up of both American and French oak. The wood ageing is followed by a period of bottle ageing.


Tasting Notes:
Deep and brilliant, with ruby shades and gleams. You will find flavours of red fruits like plums and subtle floral nuances that bring to mind violet. Good intensity, pleasant tannins, with a hint of sweetness, well combined with the fruit, interesting acidity that gives a fresh touch. Its a wine with a long finish and persistent on your palate. Shows a cherry red color in the glass. This wine has a fruity and floral prevalence. It is an exquisite wine with velvety and equilibrated tannins, and a long and friendly finish.

HISPALIS - Tinto 2010

Hispalis Tinto

Elaboration:
This wine has been obtained from macerations at moderate temperatures and lasting six or seven months approximately.

Testing Notes:
Intense, dark cherry-red color with violet borders that indicate its youth. The bouquet evidences a high intensity. The first sensation on nose is that of blueberries and plums, juicy and fresh as the grapes themselves. With elegant and floral flavors, it has touches of pepper and wood. This wine is wide and attractive on palate, with sweet tannins and fruit aromas at the finish.

   

HISPALIS - Rosado 2010

Elaboration:
This wine has been elaborated with maceration process that lasts only few hours, followed by a draining process. The fermentation is possible thanks to the addiction of yeasts and is carried out at low temperatures, lasting twenty days.
Testing Notes:
With an attractive and intense scarlet color, this rosé wine has a blend of soft blue and violet shades in the glass that exhibits its young age.
This wine has a fresh and pleasant flavor with fruit touches that suggests a mixture of strawberry and raspberries and at the same time tart and sweet. The palate also exhibits hint of tropical fruits, such us mango. On palate it has a fresh entry with sharp acidity that gave a great balance. This balance makes a good structure that turns this rosé into a wine with a high intensity of taste, with a delicious step-mouth and great taste persistence, delicate and charm.

HISPALIS - Blanco 2010

Elaboration:
This wine has been produced from a maceration of a few hours. After this stage, there is a bled made possible only by gravidity, from which we obtain the first quality grape musts, that later is subjected to a low temperature fermentation.


Tasting Notes:
A white straw-colored wine with green shades, it has a jasmine, floral aroma as well as a fruity aroma, pineapple and grapefruit. An excellent balance between its acidity and light sweet taste from the alcohol, this wine feels full and round in the mouth.

   

HISPALIS SAUVIGNON - Blanco 2010

Elaboration: This wine has been produced from a maceration of a few hours at low temperatures, and after ranking, the fermentation process is made with selected yeasts for 21 days at 16 degrees.

Testing Notes: It's a white straw-colored wine, clean and bright, showing its seduction and elegance on nose, with to citrus green aromas like grapefruit, exotic fruit and to white flowers. On palate is expressive, large and with good persistence, making a nice and fresh wine. It's freshness makes it's ideal with salads, fresh cream, pasta, seafood and not too fatty white fish.


CAMELOT - DULCE MONASTRELL - Tinto dulce

The extreme aridity and age condition of the strains combines to produce our sweet wine, CAMELOT. With an intense red cherry colored wine, that denotes overripe fruit aromas and dried figs, along with wood terpenes, due to its barrel rest. Thanks to the balance between sugar and acidity we obtain a lush and delicious wine, with long trace and happy fade..

MATIUS 2008 - Tinto Crianza

Vintage: 2006

Elaboration: From low production strains of Monastrell, Cabernet and Syrah varieties, harvested and vinified with absolute obduracy, born MATIUS, a wine with intense cherry color and purple shades. It is expressive, with aromas of matured fruits amalgamated with spicy and smoked nuances coming from his semiannual rest in American and French oak. With fleshy, powerful and unctuous tannins, it has a surprisingly chocolate flavor finish.
